Since Labcenter Electronics (the creators of Proteus) does not manufacture this part, you must download a user-created model. There are two common versions available on engineering blogs and forums:

The HX711 is a popular 24-bit ADC for load cells/strain gauges. In Proteus (a circuit simulation and PCB design tool) you can simulate designs that include the HX711 if you have a suitable Proteus library (component model or symbol + simulation model).
