Word’s default PDF export strips bleed and changes fonts. Always use File > Export > Create PDF/XPS and check "Options" then "ISO 19005-1 compliant" (PDF/A).

You set all margins to 1 cm. It looks symmetrical. But when you open the actual book, the text disappears into the spine. Always use that 1.8cm inside margin.
